A refined take on a classic. This pastry features a light, gluten-free* pâte à choux filled with a silky hazelnut mousseline made from our housemade, stoneground Piedmont hazelnut praline. We’ve kept it lower in sugar to let the deep, toasted aroma of the nuts shine, finishing it with more praline as well as caramelised hazelnuts for a satisfying crunch. It’s a nutty, elegant, and unapologetically decadent treat.
